The milk is first set into curd overnight. The curd is then traditionally hand-churned to make makhan, which is slowly clarified into ghee. This is the traditional Bilona method, a process that requires considerably more milk and time than many modern production methods.

Aroma and Danedar Texture You Can Notice

One of the first things you may notice when opening a jar of traditionally prepared ghee is its aroma. Culturing milk into curd before churning contributes to a richer, more pronounced fragrance that can make a noticeable difference when used in everyday cooking.

Then there is the texture.

Authentic Bilona ghee can develop visible crystals when it sets. This grainy texture, commonly called danedar, is a familiar characteristic of traditionally prepared ghee. Natural variations in temperature, season, and clarification can influence its final texture.

In other words, perfectly smooth ghee isn't automatically better ghee.

What Does the Nutrition Label Tell You?

Pahadi Aura believes the nutrition label should be considered alongside the marketing.

Ghee is predominantly fat, with saturated fat forming a significant portion of that fat. Therefore, switching to a premium or traditionally prepared ghee does not remove the need for moderation.

Pahadi Aura’s label also lists naturally occurring trans fat and other nutritional information rather than hiding numbers that consumers may want to understand.

What About the A2 Claim?

A2 refers to a variant of beta-casein found in the milk of certain cattle breeds. However, ghee contains virtually no protein after clarification. Therefore, claims that A2 ghee automatically provides special digestive benefits should be treated cautiously.

Is Pahadi Aura Ghee Right for You?

If you rarely use ghee or have been advised by your doctor to limit saturated fat, there may be no reason to pay a premium.

The easiest way to decide is to start small. Try a smaller jar, compare it with your current ghee, and use both in a familiar dish such as dal or tadka.

Sometimes, the best way to understand the difference is simply to smell it, cook with it, and taste it for yourself.
